How to calculate recipe scaler
Method: New ingredient quantity = original quantity × target yield ÷ original yield
- Record original and target yields in the same kind of unit.
- Calculate one scaling factor.
- Multiply every ingredient, then round indivisible items practically.
Worked example
Using these planning inputs:
- Original yield: 4
- Target yield: 10
- Original flour: 500 g
Scaling factor: 2.5×
Reality check: Cooking vessel, mixing capacity, proofing and cooking time do not always scale linearly with ingredient quantities.
